I’ve come to think anything touted by any”expert” is probably bullshit. From diet recommendations to statistics, it is all BS.

Believe little of what you hear, and half of what you think you see. Never has been more true than today.

Two meals for less than one MD, and better for you. If you want good food, cook it yourself. One of our fast meals consist of Costco whole chicken cooked, Ore-Ida steak fries, coleslaw from scratch, and ice tea. Under ten dollars with leftovers for two people.

The Redemption of Cholesterol—How It Supports Your Health
By Joseph Mercola

Heart disease is one of the leading causes of death, and cholesterol is frequently given the blame. But is it justified?

Over the past 60 years, research has repeatedly demonstrated that there’s NO correlation between high cholesterol and plaque formation that leads to heart disease. Despite that, the saturated fat/cholesterol myth has persisted.

After researching the science of lipids, cholesterol, heart disease, and nutrition for nearly eight decades, Dr. Fred Kummerow—now nearly 100 years old—has a thing or two to say about the matter. In fact, he was the first researcher to identifywhich fat really causes the clogged arteries conventionally blamed on saturated fats.

Since the late ’70s, he’s also studied the imbalance of nutrients in the American diet that lead to obesity. His new book, Cholesterol Is Not the Culprit, focuses on the basic chemistry of food, how your body works, and how food fits into the equation.

Dr. Kummerow’s work shows that it’s not cholesterol that causes heart disease—it’s quite safe to eat eggs, for example—rather it’s the trans fats that are to blame. He was one of the first to make this association, and the first to publish a scientific article on it, all the way back in 1957.

“That was the first article that showed that trans fatty acids, which are present in hydrogenated fats, caused heart disease,” he says.

Why FDA Finally Took a Stand Against Trans Fats

Consumption of trans fat, which for decades was touted as a healthier alternative to saturated animal fat, radically increased in the mid-1950s. And according to Dr. Kummerow, rates of sudden death from heart disease have faithfully risen right along with trans fat consumption. Fortunately, the science showing trans fats to be FAR more harmful than saturated fat is finally starting to get the recognition it deserves.

Not surprisingly, considering his long history in this field, Dr. Kummerow may have played an instrumental role in getting the US Food and Drug Administration (FDA) to finally address this health hazard. In 2009, Dr. Kummerow filed a citizen petition with the FDA calling for a ban on synthetic trans fats. In the petition, he noted that:

“Trans fat leads to the reduction of prostacyclin that is needed to prevent blood clots in the arteries. A blood clot in any of the coronary arteries can result in sudden death.”

The FDA is required to respond to such petitions within 180 days, but nearly four years later, it still had not responded. So, last year he filed a lawsuit against the agency.1 Interestingly enough, it wasn’t long thereafter that the FDA announced it was considering removing partially hydrogenated oils—the primary source of trans fats—from the list of “generally recognized as safe” (GRAS) ingredients.

The agency gave the industry a total of 120 days to comment on the proposal. The FDA noted that there are 30,000 items in the American diet that contain trans fats. That should give you an indication of just how prevalent these dangerous fats are!

Basically, if you eat processed foods, you’re likely eating trans fats. Many products that claim to be “zero trans fat” simply have portion sizes that are so ridiculously small that the trans fat falls below the permissible limits.

Trans Fats 101

Structurally, trans fats are synthetic fatty acids. Fourteen of them are produced during the hydrogenation process. (They are not present in either animal or vegetable fats.) As explained by Dr. Kummerow, trans fats prevent the synthesis of prostacyclin,2 which is necessary to keep your blood flowing.

When your arteries cannot produce prostacyclin, blood clots form, and you may succumb to sudden death. Avoiding trans fat is therefore imperative for cardiovascular health. Vaccenic acid, found in cow’s milk, while a naturally-occurring trans fat, has an entirely different composition and does not cause the adverse health effects associated with hydrogenated oils.

“It’s a matter of complex chemistry that makes a difference,” Dr. Kummerow says. ”The Food and Drug Administration has for years confused those two fatty acids. One causes no problem; the other one does.”

Cooking has absolutely tanked our food bills each month. We ate more upscale than McDonald’s, so when we cook it costs about a third of what it does to go out.

Not only that, but the food is (almost) always better, the staff is friendlier, and I don’t have to deal with the mouthbreathing masses.

And this is why poor people stay poor. They make terrible choices about where to spend their limited funds.

This whole fast food phenom is a perfect example.

You can invest in some basic kitchen equipment, which is durable and can last for decades, and some rudimentary cooking skills, again something that lasts for decades and can be updated (for free) with a few hours watching a cooking show.

You can buy FRESH FOOD and prepare it yourself in the time you spend in the freaking line for the fast food window and the gas to get there, for the love of Christ.

You have LESS TRASH because you don’t have all that paper waste, and, if you have a dog/cat/chickens or a compost pile, you have NO ORGANIC waste.

Ya’ know, we used to teach Home Econ in high school. It was all about how to cook, manage a kitchen, prepare from a menu, and manage household expenses. Home Econ, Spanish and Typing, were the singular most helpful classes I ever took in terms of preparing me for the Real World.

But preparing for the Real World is not what public schools are for these days, right? It’s all about having bathrooms for transgendered teens, or teaching your kid to put a condom on a cucumber or how Heather has two mommies, or global warming-cooling-change-disruption or whatever the lollipop pooping unicorn liberal lunacy of the day is. Oh, and all the political propaganda and indoctrination, of course.

Now lets’s step back and look at the bigger picture.

Fast-food multinational companies buy and sell our CONgressman, yes those folks that might have a wee impact on public school funding and curriculum. Do they really want kids to know how to prepare their own food or to be indoctrinated to buy the fast food?

Fast food companies are part of the business cabal that works to offshore jobs/manufacturing to increase their profit margins. Americans are now working more hours for less $$ than any other time in our history. They are convinced that they don’t have “time” to prepare their own meals and thus wait in their cars to eat this “fast food”, which costs more and is of worse quality, and arguably takes even more of their already limited time.

Yet another totally unsustainable positive feed back loop just waiting for the crack up boom.

That $27.89 McDonald’s meal …… if you bought the ingredients at a supermarket and made it at home it could cost, at most, about $8 bucks ….. and you would be eating real meat.

I first realized the high cost of fast-food via my TacoBell habit. Yeah, sad to say, I used to love that shit. My bill routinely came to $10 – $15. There’s about 2 ounces of “meat” in a TacoBell taco. I eventually realized I could make a cheaper and better taco for 90% less money.

@Stuck – I used to eat Taco Bell all the time, for years it was the only fast food place near my place of work.

Then we found out my wife is allergic to wheat. No more T. Bell for me. One day about 6 months into my self-imposed T.Bell fasting period my wife was out running errands leaving me to fend for myself for dinner.

Awesome, Taco Bell it is! I rent a movie on the way home (corny Kung fu of course) and grab some taco bell while I’m at it.

Instant regret. The movie was decent but I cannot stomach that shit anymore. We cook 90% of our meals now, if not more. Fast food of any stripe does not sit well with me at all.

I think I had one shit-soda in the past year. Yesterday at my mom’s house my vegetarian seester brings her usual tofu-shit and a bottle of coke. I take a sip. It took some serious willpower to not spit that shit out of my mouth. Shitty syrupy gooey sugar water. Amazing that people can drink that shit.

That’s 6 uses of “shit” –now, 7 — in one brief post. Should give you an idea how I feel about it.

We home cook nearly 100% of our meals and I cook about 80-90% of them. I also do almost all of the food shopping. My kids have never had a school lunch, I have been packing our lunches since we got married, and since the kids started school. It boggles my mind when I see some of my younger colleagues go out for lunch several days a week, I can only imagine what it adds up to. I am a notorious user of left overs. Yesterday’s Sunday dinner of ham, that I bought after Easter marked down, the left over bone and some meat are in the pot making a spicy black bean soup. $12.00 worth of ham will make at least 4 separate meals and I sent my parents home with enough for 2 more meals. I may be cheap, but me and my family eat well. What Hope said about managing a kitchen/house is so true. Many of the people who eat like this have never seen anything different, so they continue to make the same poor choices assuming that it is the normal thing to do.

I haven’t eaten McD’s since 1997. Others, yeah, but I drew the line a the golden arches. I haven’t fed the clown in years. Now, we don’t eat that stuff very often. I am a sucker for Moe’s or Baja or Z pizza. But given time, I can cook a mean pizza, myself. The crust is great, the toppings are healthy, and you can’t get enough of it.

Pizza’s are my specialty. I worked at Pizzeria Regina for 2 years, I love making my own dough and homemade calzones. The trick is to give the pizza stone plenty of time to get up to full heat. Made pan pizzas while on vacation on the Cape last year with another family. They could not get enough, Must have made 20 of them over the week. Much cheaper to make than to buy. I see ham and pineapple pizza in my future with all my leftover ham. My son’s favorite.

I worked at Burger King in high school, people would come in order a double meat whopper with double cheese and a large fry [back then we used lard instead of vegetable oil] and the order a diet coke with it.

It’s easy for a newbie to go to a farmers’ market or food club and go into complete price shock. BUT, my experience is that you can buy from the best farms, cook from scratch and have a hard time exceeding the fast food meal price. The ingredients might seem expensive, but that doesn’t make the meal expensive. For the same price as the fast food meal, you can have say, a whole pound of grass finished beef, a big bowl of pea sprouts, a bowl of heirloom tomatoes (some of the things that send people into price shock). What would you rather eat? The ingredients taste great on their own, so there’s no need for recipes or a culinary degree to make cheap ingredients taste palateable.

Obviously, if you shop raw ingredients from the grocery store/big box it’s even cheaper (but far less nutrient dense for the same dollars).

I defy any chef anywhere to produce anything that tastes as incredible as a home roasted pastured, soy free chicken seasoned only with sea salt (you don’t want spices to ruin the meat’s flavor). What works for me is 425F for 23 minutes a side. You get a beautiful crisp skin and tender juicy meat.

I’ve come to believe the taste is just reward for paying enough to allow the plants or animals to have a great life before they get murdered so we can eat.

By the way, I figured out that if I were forced to eat solely from a food stamp budget (pretty sure its $184 for a single person per month), I could do it, even buying from the same “expensive” micro farms. But, even though I have zero land to grow on, I would need to grow something like sprouts that are super nutrient dense, can be grown indoors and would allow me to buy some more pastured eggs, some more pastured animal fat (that’s where all the important vitamins are), or maybe some extra meat.

It can be done. You can be frugal: not hard to make kefir, yogurt, creme fraiche, kombucha tea, or butter. Bones become stock. Extra fat from the stock is used to sauté veggies. Farmers market produce is eaten in order of how fast it will rot. Etc.

As much as I like this factoid graph, I have to ask, for the two non-fast food meals, does the cost of prep / cooking also factored in? Labor is never free and neither is electricity. It is probably a very small amount added to the cost but it is important. There is no way that it comes out to be as expensive as a fast food place either way.

I am a bit surprised that a store in Brooklyn would have food so cheap. But that is my bias showing I guess. When I think NYC areas I think “expensive.” The markets around me are definitely more expensive than the place cited above. For example, a head of lettuce probably would run you closer to $2.

Disclaimer: I own stock in fast food places. I may not eat at them, but I’m not stupid.
