Once again, flash jumps to unfounded conclusions. Health plans for military retirees do NOT include routine dental, hearing and eye coverage. My wife and I go to the dentist twice a year for cleaning and checkup, and we pay for it 100% out-of-pocket. But I do have excellent NATURAL teeth, as does she.

Have you ever had country ham? It’s salted and smokehouse cured. It is unique to the Blue Ridge Mountains running from south central PA through western MD down into VA. It is to absolutely die for. If you have it for supper, keep a big glass of water by the bedside. You’re gonna need it.

They have the absolute best bacon I’ve ever tasted although I do want to order some from HSF soon.

I’ve had country ham from that region several times and you are right about the quality and needing a big glass of water! Allan Benton and my father tell me to heat slices of country ham in a skillet and pour in a cup of coffee. When the coffee is about gone, the ham is done and it cuts the salt. My dad will actually soak country ham in a weak coffee/water solution for 24 before heating it up to cut the saltiness.

I am curious what it is that makes bacon taste so dam good? Is it strictly the spices/cure or does the pork belly itself have a unique flavor aspect to it? I wonder because I’d like to “cure” some pork chops in the same manner as bacon and see if I end up with bacon favored pork chops!

We have a country ham hanging in the kitchen right now. We get one every year. Country hams can be found in Tennessee too. About 40 years ago my mom and dad found a little old place on the road between Franklin and Columbia Tennessee called Early”s Honey Stand. It had been there for many many years. It’s not as little these days and they ship their fantastic hams and honey all over the world to those in the know of the finest salty country hams.

Ever since that first visit to Early’s we get some of their ham and honey almost every year for Christmas. We occasionally get a half ham already sliced up. Country ham with eggs, biscuits and red eye gravy (made from a bit of coffee poured over the ham grease left in the skillet.) is the best breakfast going. We polished off the last two slices of our breakfast ham about two weeks ago.

We soak the ham to bring out some of the salt and then it’s baked with a glaze made from the honey. We fry (really just heating it up rather than cooking it) the sliced ham with a light sprinkle of brown sugar on low heat until the fat clarifies in a large iron skillet.

These are the reviews I found for the Bentons Bacon I mentioned earlier. I agree with all four. This stuff is so good and rich that although you want to eat ten pounds of it, one or two slices gets the job done. Each bite is like a bacon bomb going off in your mouth.

Anyone else leave the pan of grease on the stove for the entire day after cooking some Benton’s Bacon?

That great bacon smell fills the house for the whole weekend. Love it!

If you have an enemy, somebody that you would really like to do something that will ruin their life. If this person loves Bacon, I mean really loves Bacon….then send him/her a pound of this stuff. At first is will seem as if you have done him/her a major solid, that you are attempting to bury the hatchet…. but then ….the pound will be quickly gone….and he/she is going to have to go back to that stuff they call Bacon at the Grocery Store…. he/she will be standing on the Bacon isle at the store, looking for something comparable to Benton Bacon…. there is nothing comparable to Benton Bacon…and in that moment of frustration and longing…they will know…what you have done to them….you will have ruined them forever for being able to enjoy the readily available stuff. Then they know that you were indeed buried the hatchet…..in their back.

This is what bacon is supposed to be. My only regret is overcooking the first two pieces and losing some of the smokey flavor.

No other bacon will do after you’ve had Benton’s.

This is the best bacon I have ever had. Make sure you do not over cook it or you will lose the subtle flavors. I love the smell of the smoke on my hands after touching the bacon. It will ruin you forever.
