Make sure you know where your bacon comes from and also that it is uncured and contains no nitrates or nitrites. Consuming mass quantities of anything is bad for the body, ALL things in moderation.

The Chinese own most of the bacon brands now. Smithfield, Hormel, Farmers and Morrell to name a few, I won’t buy these brands or store brands.

I worry more about the amount of sugar that they cure a lot of it with anymore. It’s quite difficult to find “no sugar added” bacon, at least around here. Heck, even a couple of the butcher shops in the area refuse to keep any in stock that’s not sugar cured! That said, uncured would be best if you can find it, as you said.

Could be my daughter. Red hair, brown eyes, blank stare before coffee arrives and a huge pile of bacon for breakfast. First thing she did coming home from UMass last week was cook all of the bacon in the fridge and yes she is in excellent shape, bacon will not make you fat. The only thing I would add is a couple of farm fresh eggs and a huge cup of coffee made from freshly ground beans like I had for breakfast this morning.

I’d add some hash browns mixed w/ plenty of chopped onions and peppers plus a side of fresh fruit. Heaven.

I do the same thing at every breakfast buffet …one plate of bacon, one plate of the other stuff.

PS: I’m 6’2″ or a touch taller and a solid and healthy 220..low LDL and above average HDL–BP solid in the 60’s or low 70’s diastolic.
I could give a dam about sugars, nitrates or nitrites–and last I checked, mortality rates for humans is still 100%.
Stay active and also include veggies, fruits, nuts, berries and local produces..it’s the stress and worry about micro-managing yourself that will kill you……

PS to Boston Bob–my older daughter is also a huge bacon fan, always cooks a whole pound for breakfast when she comes to visit; and she ran the philly marathon this past year-lithe and lean.
