Smoked some ribs yesterday. Still enough for today. I was noticing some 2″ ribeyes at the store Friday. I think I’ll go back and get them for tomorrow.

I got some 2″ prime ribeyes & grilled them today, since I’m supposed to have a storm tomorrow afternoon – they turned out magnificent!

I grill ’em almost like I do with a slab of ribs – get a good sear on each side over the coals, then put ’em over on the other side of the grill for indirect grilling – 20-30 minutes will result in a nice rare/medium rare steak – tender, juicy, almost buttery…

(Ribs – I smoke them indirect for a minimum 2 1/2 hours)

Were I home, I’d be lighting off my Big Green Egg around 02:00 Pacific time tomorrow morning, starting a couple of Pork Butts for smoking around 14 hours or so, with ribs going on by around noon. Potato Salad, Pasta Salad, Cole Slaw, Baked Beans, Corn on the Cob, Dutch Apple Pie & Blackberry Cobbler, and assorted Finger Foods before serving at about 16:00. Oh, can’t forget the Crab & Cream Cheese-stuffed Bacon-Wrapped Jalapeño’s…… And Watermelon. The little kids are funnier than shit with watermelon seeds. My wife and I usually spend about 2 days prepping for the Fourth…..

And several corny kegs of my American Amber…..

My kids are pretty lackadaisical when it comes to cooking, so they’ll probably do Burgers and Dogs, with Deli-Bought Accoutrements. And the last of my American Amber…… It’s still The Fourth, it’s still grilling, it’s still time Well-Spent with the kids and grandkids, but just not quite as tasty…… I never view it as “Work” because I love to cook. Mrs. Ed? Not so much…….

Flags are flying all over our little town (it flies every day at my house and others) and flying at the Farmer’s Market. We are in Colorado, but we saw license plates from New Mexico, Arizona, Utah, Nevada and California while walking to the Market, our favorite Saturday activity. Getting to know the people who grow your food and wine grapes is great, and they keep us up on what’s coming in next from the fields. Those out of state plates tell us that people aren’t letting the gas price stop them from traveling. Everyone at the Market is smiling, talking, and having fun. The only demonstrations are hugging, laughing and catching up with friends, we saw some who drove in from a town 50 miles away.

Chicago style Combos. Roasted prime rib sliced thin and put in au jus. You cook some green peppers in the au jus, and you put them over the combination prime rib and Italian sausage. You put this in a French style bread. No, we do not put cheese or onions. Thats a philly.

I used to get them from a place on south Cicero Ave. near the Tri State where they would give them a broth bath, then wrap in paper. You had to spread your legs, lean over the counter with elbows out to eat it. Always left with a full belly and a smile on my face.

Two ribeyes, a filet mignon, bake potatoes, broccoli, ice cream, and a fruit tart (strawberry). We aren’t travelling anywhere, so decided to splurge while we still have the ability.

Filet Mingon brushed in butter and garlic, rare to medium rare. Will serve with enough onions and whole baby Bella mushrooms that other sides won’t he needed. Mouth is already watering.
