The methane is the result of feedstock incompatible with bovine digestion.
They are ruminants, not omnivores.
You don’t have to gene edit them to fix it, you need to feed them what Nature designed them to eat, grass.

The cow is not the source of methane, the grass is, or, rather, the bacteria that decompose grass. See any swamp. It’s about the cellulose, which grass is high in, which is why a cow needs bacteria to predigest it for them, and why humans need a cow to predigest it for them.
They used to teach this as chapter one of every high school freshman biology textbook, but looking at a recent book I find that it’s buried back in chapter 15, subsection b.
To make a cow that doesn’t emit methane, simply produce a cow that doesn’t eat.
Of course the grass just keeps right on emitting methane whether it is in a cow or not, because grass dies and decomposes, but it’s a lot easier to just point at a cow.
And if one looks into the matter a bit deeper, one might be inclined to come to the conclusion that the cow is the actual target, not the methane, and that the reason the cow is the target is because people are the really real target.
The use of supplemental feedstock in the form of corn/legumes/sugars more than double the methane produced by cattle who are fed an all grass diet.
All mammals produce a certain amount of gasses as a natural byproduct of digestion- bacteria emitting gas as it breaks down whatever has been eaten. The idea is that each species should eat a diet it would encounter naturally, as it was designed to. The current practice in cattle and dairy operations over the past 75 years has been to increase production (milk) or carcass weight (beef) by feeding them large amounts of corn, soybeans, etc. While these feedstocks can be digested, they breakdown differently in the rumen and the production of methane rises in proportion to the feed consumed.
And yes, this is about starving people to make them weak and compliant, not controlling atmospheric gasses.
