I think back in the day I was likely the first one to talk about being able to reuse metal lids. Like a lot of things I have suggested over the years it sure got a lot of push back, but now most of the suggestion seems to have become rather excepted. I have never used the tatler lids, but I do like the idea of them.

I take the rings off after cooling. The rings are good just to keep the lids in place. I listen for the satisfying “pop” as the lids seat as they cool. If there is one that doesn’t seal, the lids don’t “ring sound”, that means by tapping the lid with you finger-nail and it doesn’t “ring” means it probably didn’t seal and that means it might be contaminated.

As they sit on the shelf after time, you may find that some lids might be unsealed. Personally, I discard it at that time. They might be “a-working” meaning spoiled, same as metal cans that developed a domed top. This indicated a possible of gas producing bacteria, (usually caused by the clostridial bacterium).

It is really a brilliant method of food storage. Not only has it been preserved by destroying dangerous biological infestations, but it has been preserved in a vacuum. A vacuum environment is another benefit to prevent aerobic bacterium such as Proteus, Salmonella and Mycobacterium tuberculosis, amongst others.

I know, I’m long-winded. For those who already know this canning stuff, well, all I can write is that I am glad for you and hope all TBPers can benefit from this “heads-up” from Ghost.

a real long time ago, canning lids had a real rubber gasket that was about 1/16th of a inch thick. I remember my grandmother using them with the lids and rings. they weren’t the painted on ones that deteriorate in a few years just sitting in the drawer. I bet a person can get a gasket cutter and make their own rubber seals if the cheap POS ones become unavailable for some reason.

What we do if the lid doesn’t seal after the cooling. We stick it in the fridge and use it.

But, my wife stated the other day that lids are becoming scarce. She was looking for a source to renew and get some extras of the older type, rubber rings. Even the newer type with the painted on rubber are hard to get here. We be canning for a long time yet to come regardless of what the govt douche bags dictate.

Maggie,

Canning lids have always been one of my basic and most prolific Prep items to buy when found on clearance.

My shopping M.O. on a lot of basic items.

Probably have at least 500 lids (in all sizes) besides at least 150 new jars (in all sizes) stashed away in the bowels of the basement. Besides the hundreds of rotated yearly eaten and filled jars.

(I married a canner from West Texas…she married a farmer from New Jersey…isn’t life ironic? Or does God just have a match making sense of humor?)

But Canning Lids and Jars will also be a top Barter item after TSHTF…almost as valuable as those tiny bottles of vodka for snakebite.

(I also have lots of snakes…just in case).

I have a bunch of the Tatler lids, but much prefer the metal lids and rings.

I suspect something is heading this way… the repackaging and marketing of jars in smaller packages tells me something is up in the canning world.

Well, yeah. Headless horseman’s always heading this way. Just bought another case of wide-mouths. Same package size. Different price. But shrink-flation is going on because of the headlessness that’s already here.

What’s less desirable about the unfortunately named Tatlers? (Tattling was the last thing you wanted to do when I was a kid. That snitchessless in time saves 9 stitches bit. Hello code o’ silence, my old friend….)

Anyway, OT, but gonna see these guys next week so overdosing on their music right now.

Speaking of shrinkflation, just bought a dress for the show. I noticed the dresses are getting shorter & shorter – like ‘you can’t pick up anything you drop’ kinda short. I mentioned this to the store owner. She said we are about to go to war (really??) and in times of war dresses always get shorter due to lack of materials or cost of fabric – yet prices stay the same or get higher. Anyway, I thought that was interesting. I see it with other items but never made the connection to fashion. It makes sense.

Also, in my family, the tattler was punished just as harshly as the offender.

Ok, back to canning now.

As I said, tastes differ. But Pentatonix sounds like a faggy boy band to me.

S&G version is good but I think the Disturbed version is better. There are several crescendos that, even after hearing it dozens of times, makes the hairs on the back of my neck stand.

No idea what the Disturbed position on anything else is. Not relevant to me, I just like the song.

Well, you might be right about the faggy thing…but their voices are amazing to me. Especially the female’s…she’s got some lungs on her for sure. Wish I could sing like her. I do sing, just badly, and I force people to listen to me. It’s a flaw.

My kids have all picked up beatboxing recently. Role model is D-Low. I yell about 20 times per day: “STOP THE BEATBOXING!”

And dresses don’t just get shorter, they also get tighter. Even in the closet. Must be a Mandela effect.

Hey, with beatboxing skills your kids can one day be in the Pentatonix group. Lots of things beatboxing can lead to…keep it up. Add in some Hip Hop dancing to round it out. 🙂

I opted for a longer dress, but the bottom portion is sheer…it is clear the dress makers were trying to use as little material as possible..

Good voices; strong, very clear, sinuous articulation. No way “sucked” applies. Or “boy band.”

But I know someone, poor lost tastebud, to whom cilantro tastes like soap. (Hmmm, maybe if soap is substituted, it’ll taste like cilantro?)

These people are vocalists in ways S&G never were, could have been. And tight harmony … well, that’s a big part of how Eagles ruled the 70’s roost.

But even extroverts impersonating the borg have to comport ‘as if’ their dance frames are locked (Dirty Dancing ref) … even tho its really just a plate of spaghetti (arms – DD, again)? The Lady & the Tramp? (another spaghetti scene.)

Yeah, but even then, that bit of omerta-ness in our clan was not the way the wider world worked. “See something say something” (unless “don’t ask don’t tell”) & cell phone papparazi & videographers champing at the bit to twitter-tattle now, because the gadgets enable it now. Contrary the rosy view by another name smelling just as … much as ever … I don’t see that people have really changed all that much. Puritans, Victorians, Gossips catchin’•as•catch•cans.

Nestor may be all wet, dunno. But aerobullosis is not so much the issue here as much as parity/coupling and resultant kinder lingerers. I have long pondered that those who had consumed the fruits of Melville’s whale fan-tacy and no apparent awareness of the possible regards to the wanna-be Café Du Monde and Nantucket’s’ Mr. Bux? The first connection that I have “seen” if only in text is your exclusive exception.

Well, he’s trying to get wet au natural. Freediving. (Coming up, communing, in that way, with the Sperm whales.) But it’s a process. Plus, he’s afraid of sharks.

Aerobullosis (hadn’t seen it that way before) bypass is the freedive – but it can be expensive in other ways.

Kinder lingerers, exactly. Looks & sounds like cetacean-speak, sperm whale comms in particular, puts the English behind the 8-ball & just sinks it, hard. And not just metaphorically, either, but quite, quite literally if you get on Moby’s bad side. He can talk you all the way down with solid walls of sound.

I had my first beignet just recently. Plus chicory coffee to go with it. Now I don’t have to go back to NO. At least not for those experiences, which did not capture me. Leaving some allowance for whatever might get lost in translation, or relocation, to the rocky mtn front range, of course.

Those boys on whaleship Essex wished it was fantasy.

And I’ll wish Starbucket’s Essex’ized & Waterlooged, too; the sooner the better – – & I will mark calendar, as an annual celebration day, when it occurs.

(Passing thru SLC, winter ’20, stopped at one of the nodes & was refused service. No mask. Speaking of donuts, same thing happened at the DIA Dunkin. Ain’t going back there, either.)

Melville’s a deep dive. Lots of pressure under all that density. More allusions & connections than an average plate of spaghetti. A good roadmap book, that helped me with The Confidence Man, is H. Bruce Franklin’s The Wake of the Gods: Melville’s Mythology.

Also appreciate the angle that Mel, among others, epitomizes. People were better read, more literate, in his day. But not enough so. He couldn’t pay the bills with his writing. Later carpetbaggers came along & made all the money off his work. More reality ~ & better coffee ~ in that than all the “essential” businesses combined.

I canned for the first time this year. To get the feet wet, kept it simple: Pickles and tomato sauce. Haven’t opened any of them yet.

Went to FL to escape the snow last week. Was nice. Ate too many carbs (Mickey waffles).

Also, trying to live life more and spend less time here (no offense), to make the most out of every day.

Next project: sort my large box of greeting cards by category (birthday, Christmas, Thank you, blank, other).

On second thought, maybe that is not “making the most of life”…

I HAVE been working on decluttering the house and getting rid of stuff though. Feels good to have more space, but I am always torn between donating and selling, for a very meager profit.

Pickles and tomato sauce.

Is a start.

I water-glassed eggs last summer, as we were getting so many of them. Now, our hens are offering up two to three a day. So, I opened one big sealed container tonight and tossed two obviously bad (cracked) eggs out into the woods. Then, I baked cookies with a couple and have now some drained and ready for breakfast.

I do open them into a bowl first, just to be sure, but so far? If the shell is cracked, it is obvious.

I have almost 60 quarts of tomatoes, in a variety of styles. Not bragging, it was just a good year for tomatoes.

I only got two eggplants.

That said,have enough supplies the fed decides tis illegal/threat to homeland ect. will be fed till that issue

Like many of you I have been wondering why theft has basically been made legal. Everyday we are treated to mobs with hammers stealing everything that can’t run away and no one does anything. Then I read today that all the world’s leaders have made an official announcement to implement vaccine passports so now it makes sense. The theft will get so bad stores will start locking up everything. When the food inflation becomes unbearable food stores will be robbed bare. This will facilitate an excuse to lock up everything including food in unbreakable boxes you need a code to get into it. That code will be dependent on your vax status. No jab no food. No jab no clothes, no jab no soap or medicine. It all makes sense now. With everything locked up you won’t be able to steal so much as a tomato. They have to ban canning and private growing next to force you into the system. So there you have it. The plan. Complete control.

Am I the only one who noticed this? Both our local Kroger and Safeway were ‘supposedly’ renovated this past year and all of a sudden huge amounts of items were inside coolers with handled doors. I have this creepy vision of people who are social pariahs (like me) just staring into these cases while the ‘followers’ are the only ones with the access code to get eggs, cheese, hot dogs, etc., etc.
An awful lot of strange product placement occurred and many, many items are no longer available. Did the chicoms buy the grocery chains?

We have lots of canning lids. I also started reusing spaghetti jars and lids 2 years ago. We pressure can and they seal just fine. If they don’t, we stick the jar in the fridge and eat it that week. Most of what we can is high acid too.

Here’s a reaaly useful tip for when TSHTF, and all the stores have run out of TP and Bottled water–Office Supply Stores like Staples and Office Depot have bottled water, TP, coffee and snacks, as well as cardboard and reams of paper to start your wood stove fires with. Not many people are aware of this.

I believe this may belong here for the sort of people concerned about the FDA snooping into the process of home canning as a source of bacteria and illness. Those of you who Poo Poo? Get some toilet paper on aisle 666.

Last summer I decided to take on the task of testing the feasibility of water-glassing eggs.

Today, I am ready to report the results.

Water-glassing eggs is a simple process but, for me, required a test of the final outcome. You can only use your own farm/backyard raised chickens, since the eggs cannot be washed. They need the slimy coating from the hen’s , um, canal.

Not dirty with bird crap, but clean out of her hinder.

you gotta know I modified her technique, Maggie -style. I’ve gotten reconnected to some really funny folks out here in the suburbs of the sticks… I might just tell you a story if you’d like to hear it. One of them is my Mennonite log home building… funniest Amish joke EVER!

I made and baked peanut butter cookies (Incoming Admin!) and they were just fine with 4-month-old water-glassed eggs.

My Mennonite log home builder comes from an Amish community in Wisconsin and has since moved closer to his Amish roots, which includes his wife’s family, also Amish.

Her father was at a local market awaiting his turn at the cash register and when he stepped in front of the cash register to pay for his purchase, the youngish man at the register tried to make a crude joke:

“You must be Moses!” he exclaimed, noting the length of the Amish elder’s long beard.

The Amish customer simply noted the amount due, paid the rude young man, walked off with his receipt then turned at the exit door to announce to everyone watching him —

“Actually, I am Adam.”
