My great aunt told me that her brother, my maternal grandfather, was quite fond of baked possum. According to her, prep it as follows: remove head, skin, and innards. Boil the carcass for about 2 hours to remove the grease. Place on a platter, surround with yams, and bake for one hour. I find the idea repulsive, but if I grow hungry enough, my attitudes may change.
If the near future in the USA plays out the way I think it will, people will start to look at alternate food sources they would never have otherwise considered. After the armies of the North plundered the South, my ancestors ate anything they could get their hands on, short of cannibalism, in order to survive.
