There are also purple potatoes (that are extremely creamy and great tasting), and purple tomatoes (also a great and slightly different taste). The western diet has been reduced to a pathetic sampling of the world’s produce, all because of monoculture farming, farm subsidies, and big Agra control of most of the farms in America. Our local farmers market sells “rainbow” carrots in all colors (red, white, purple, yellow, and of course, orange). Thankfully the “free market” addresses the demands of consumers.
Even some of the farmers’ markets get too much interest from the regulatory agencies. A cheese-making friend told me she’d opted to keep her goat cheese from unpasteurized milk at home.
But vegetables don’t carry e.coli, listeria, or any of the other “potential” pathogens that raw dairy MIGHT. Big fan of raw dairy by the way, so my comments are not meant to disparage. Just pointing out what the carrot police don’t exist while the dairy police do.
Well, here the state tax police (er whatever) raided the local Farmer’s Market to ensure that every seller had a sales tax collection permit, etc. Having sold there on occasion, most sellers make much less $1000 for a season’s production … so they can apply to get a sales tax permit ($40) and then submit paperwork every month of the year … all for a few tens of dollars over 3-4 months. Participation the Farmers’ Market collapsed from about 30 to about 10 (the few that are a bit more serious about production and maybe/probably have a permit from other lines of business) and has never recovered.
But that is e. coli that has contaminated the lettuce. NO plants support the growth of e. coli, salmonella, listeria, or other pathogens that are found in animal flesh/products. The FDA and EPA have allowed the use of human waste from sewage plants on farm produce as a fertilizer. THAT is where the contamination is coming from. The kinds of things they worry about in dairy products, are in the cows to begin with (though healthy, well-cared-for cows have so little it is no/little concern).
Eat every color of the rainbow. Every compound that produces color is good for you in all of these plants. Generally speaking, the darker the color the better.

I grow chanterray carrots.. they’re dark red inside but still orangy outside..wonder if those are any healthier
