Making chicha to drink. Finely ground corn meal fermented into a beer. Needs more sugars to ferment right, so someone (usually a woman) will put meal in her mouth and chew on it without swallowing until a mouth full of spit has built up. The spit has enzymes that change starch to sugar. She spits into the mixture to increase the sugar content and make a more alcoholic brew.
There are variations on how the process is done, but I think this is the Amazonian Basin procedure.
